Tailgate Recipes

The Village at Manor Park - Brewers Tailgate BBQTailgate season has finally arrived and whether you’re heading down to catch a Brewer’s game, soaking up some rays on the beach, or just grilling out on the patio, these two recipes are sure to be a hit for your taste buds.

Tailgate Tomato Pesto Spread

Every good tailgate party has one thing in common, a great cheese dip.
1 – glove garlic, peeled
1 – 8oz package light cream cheese
3oz (1 ½ cups) sundried tomatoes, rehydrated (cover with boiling water for 2 minutes and drain)
3 T – pesto, prepared or homemade
¼ C – grated parmesan cheese

Chop garlic in food processor. Add cream cheese, tomatoes, pesto, and parmesan. Process until well combined. Transfer to a serving dish and sprinkle with additional parmesan if desired. Serve with assorted crackers. Make one serving for every 3-4 people.

Home Run Spicy Barbecue Rub
Next is a BBQ chicken wing recipe sure to hit a home run at your tailgate party.
1 T – cumin, cayenne pepper, salt
2 T – dried chili flakes, paprika, ground black pepper
4 T – brown sugar

Add to chicken wings and enjoy!

Healthy 4th of July Appetizers

Low-Fat Deviled Eggs
12 large hard-boiled eggs , (see Tip), peeled
1/3 cup nonfat cottage cheese
1/4 cup low-fat mayonnaise
3 tablespoons minced fresh chives , or scallion greens
1 tablespoon sweet pickle relish
2 teaspoons yellow mustard
1/8 teaspoon salt
Paprika , for garnish

Halve eggs lengthwise with a sharp knife. Gently remove the yolks. Place 16 yolk halves in a food processor (discard the remaining 8 yolk halves). Add cottage cheese, mayonnaise, chives (or scallion greens), relish, mustard and salt; process until smooth. Spoon about 2 teaspoons of yolk mixture into each egg white half. Sprinkle with paprika, if desired. Cover and refrigerate for one day.

Red, White and Blue Cobbler
1 small bag of each: Frozen strawberries, blueberries, blackberries, and raspberries, thawed
½ cup to 1 cup of sugar for the fruit
1 cup flour
¼ to ½ cup sugar
1 stick butter (margarine can be substituted), melted
2/3 cup milk
Topping: Vanilla bean ice cream

Spray a deep glass baking dish with non-stick spray. Pour all the fruit in the dish and gently mix. Coat all the fruit with the reserved sugar, and allow it to dissolve into the fruit. Toss lightly again to coat all pieces. Mix the remaining ingredients together (except the ice cream) by hand until all is wet. The batter will be thin and sticky. Pour the batter over the prepared fruit. Bake in a preheated 400 degree oven for about thirty-five minutes until topping is brown and when and an inserted toothpick comes out clean. Can be served hot or cooled off for transporting. Top off each serving with a scoop of vanilla bean ice cream. This is a true blue American classic!
